Peanut Butter Italian Ice

Peanut Butter Italian Ice
There is a little Italian ice place here in town and they make the most amazing peanut butter Italian ice. I’m talking, smooth, creamy peanut buttery goodness! You can get it swirled with your favorite flavor of frozen yogurt or ice cream to create a truly delicious treat. Let’s just say, I ate my fair share of peanut butter Italian ice swirled with chocolate fro yo during my pregnancy. It was one of those treats I had to have if I was close by and they were actually open.
Lucky for me most of the times I was nearby they were closed, I mean why wouldn’t they be open at 10:30 in the morning? Because they usually weren’t open when I was around, I did some online research and came across this recipe and knew I had to try it. I could have eaten this everyday of my pregnancy if I would have discovered it sooner, or actually allowed myself too. If you love peanut butter, then you have to try this frozen treat. It’s creamy, sweet peanut butter flavor is one you’ll be sure to enjoy. I served this Italian ice to my “vegan” sister when she came to visit to meet our son for the first time and she raved about it = success. Until next week, enjoy!

Peanut Butter Italian Ice

Yield 2 cups

Ingredients

  • 1 14 oz can coconut milk, I used full fat
  • 3/4 c peanut butter
  • 2 Tbs honey
  • 1 tsp vanilla

Instructions

  1. In the jar of your blender add all of the ingredients and mix for 1-2 minutes, until smooth.
  2. Transfer the mixture to the bowl of your ice cream maker and freeze according to manufacturer directions.
  3. Serve immediately after desired consistency is achieved, 25-30 minutes; or transfer to a freezer safe tupperware and freeze.

      It’s not as sweet as traditional ice cream which makes me love it even more!

    I would have never thought of pb Italian ice. Usually just fruity flavors. This sounds awesome though.
