Welcome to the third annual #BrunchWeek hosted by Terri from Love and Confections and Shaina from Take A Bite Out Of Boca. You probably already know that I am totally obsessed with all things breakfast, so I am really excited to be participating in Brunch Week this year! Celebrate Brunch with us all week as we prepare for Mother’s Day. 30 Bloggers from around the country will showcase their best brunch dishes, from cocktails to casseroles, breakfast breads, sandwiches and salads – there’s a little something for everyone!
To kick off Brunch Week today I am sharing this delicious Gluten Free Swiss Chard & Mushroom Galette – a tender, flaky crust surrounds a tasty blend of Swiss Chard, Portobello mushrooms, shredded carrots and white cheddar cheese.
I’ve been wanting to bake a savory galette for months now, so when I received a fresh box of produce from the kind folks at Grimmway Farms & Cal-Organics, I knew just what I wanted to make. The crust is a blend of Bob’s Red Mill gluten free oats and brown rice flour, it has a nice nutty flavor that pairs so well with the Cabot Farm House Reserve Cheddar I used to top it all off with.
Gluten Free Swiss Chard & Mushroom Galette #BrunchWeek

Yield 1 galette, 6- 8 servings
Ingredients
for the crust:
- 1 c Bob's Red Mill gluten free oats
- 1/2 c Bob's Red Mill brown rice flour
- 6 Tbs cold butter, diced
- 3-4 Tbs ice cold water
for the filling:
- 1 Tbs olive oil
- 1 bunch Rainbow Swiss Chard, about 8 stalks
- 1 c sliced Portobello mushrooms
- 3/4 c shredded rainbow carrots
- 3/4 c chopped Vidalia onion
- 2 c shredded Cabot Farmhouse Reserve Cheddar
Instructions
- In a food processor or high powered blender pulse the oats, until fine like flour.
- In a food processor combine the oat flour, brown rice flour and butter, pulse until crumbly.
- Add the water 1 Tbs at a time until the dough comes together and starts to clean the side of the bowl.
- Roll the dough into a ball and flatten into a round, cover in plastic wrap and place in the refrigerator.
- Preheat your oven to 325º F.
- In a 10" cast iron skillet heat the olive oil over medium heat and sauté the Swiss chard, Portobello mushrooms, shredded carrots and onion until tender, about 5 minutes.
- Transfer the filling to a bowl and set aside.
- Wipe the residue from the skillet and roll the dough out to 1/4" thick.
- Center the dough into the skillet and add the filling to the center of the crust and sprinkle the shredded cheese on top.
- Fold the edges in, overlapping as you go.
- Bake for 25-30 minutes, until the crust is golden and the cheese is melted.
- Let cool 10 minutes, slice and serve warm.
