Ham & Potato Quiche

A delicious, savory Ham & Potato quiche that is sure to satisfy your hunger any time of day.

In our home Brinner is definitely a favorite! you know, breakfast for dinner. We are pretty big Scrubs fans as well, hence the term is in our daily vocabulary. A lot of the time that includes eggs in some form and Tuesday night that meant quiche. I love quiche, it’s so versatile with all the ways you can customize it. The other day we had ham for dinner, so we have been snacking on it the last few days. This quiche is savory, delicious and sure to satisfy your hunger. When you’re in a pinch and need a quick meal use a store-bought pie dough and whip this together in no time. I love making these in my Breville Personal Pie, which makes it super quick and easy. I’ll apologize in advance, I did get a little snap happy, I just couldn’t decide which photo to use; I hope you’ll enjoy and happy baking!

Ham & Potato Quiche

Yield 1 quiche / 4 mini quiches

Ingredients

  • 3 eggs, extra large
  • 3/4 c ham, diced
  • 1/2 c potatoes, diced & cooked
  • 1/4 c shredded cheese
  • 1/4 c milk
  • 1/4 tsp natures seasoning
  • 1 pie crust, store bought

Instructions

  1. In a bowl combine the eggs, ham, potatoes, cheese, milk and seasoning.
  2. Roll out the pie dough to fit a pie pan, pre-bake for 5-7 minutes at 450º.
  3. Remove crust from the oven and add the egg mixture, drop the temperature to 350º and bake for an additional 45-50 minutes.
  4. *It Bakes Me Happy Preferred Method {Breville Electric Pie Maker}: in an electric pie maker; cut the dough out to fit the wells of the pie machine.
  5. Fill each crust with 1/3 c of the egg mixture, close the lid and bake for 15 minutes.
  6. Remove and cool 5 minutes, serve warm.

      Karen this recipe is made in my Breville Personal Pie Maker. But you could easily make one quiche in a standard pie pan I would recommend baking it at 350 F for 40-50 minutes.
