This was my interpretation of a chocolate muffin recipe, converted for my hubby who loves cinnamon and sugar. I mean, who doesn’t love cinnamon? It takes me back to my childhood when cinnamon & sugar toast was a daily desire. Plus there is oatmeal in the recipe, one of my personal favorites – it’s healthy, it’s tasty and it fills you up, so basically its amazing! But back to the muffins, side note: I always make regular size and mini, because the mini are just so cute.These muffins turned out to be delicious, and very impressive looking, I think streusel has a way of making even the simplest dish look more chic. Like I said the recipe is an adaptation of another, I hope that you’ll get a chance to try them, enjoy and happy baking!
Oatmeal Cinnamon Chip Muffins with Cinnamon Streusel

Ingredients
For the muffins:
- 1 + 1/4 c flour
- 1 c oats
- 1/2 c cinnamon chips
- 2 Tbs cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 c buttermilk
- 3/4 c brown sugar
- 1/4 c cooking oil
- 1 large beaten egg
For the Streusel topping:
- 1/3 c sugar
- 1/4 c flour
- 2 Tbs of cinnamon
- 2 Tbs melted butter
Instructions
To make streusel:
- Combine the 1/3 cup of sugar, 1/4 cup of flour, 2 tablespoons of cinnamon, and 2 tablespoons of melted butter.
- Set this mixture aside to top the muffin batter.
To make muffins:
- Preheat oven to 350º F and prepare a muffin pan or mini muffin pan with cooking spray, set aside.
- First combine the dry ingredients in a large bowl and in a separate bowl combine the wet ingredients, next mix the wet ingredients into the dry, stir until well blended.
- Fill muffin cups 2/3 full with batter, top with steusel and bake for 15-18 minutes until a tester comes out with a few crumbs.
- Let cool 5 minutes and serve.
