Hey everyone, I’m back today sharing a treat that has been in my head for months and finally last week I was feeling up to making it a reality. I know the last few months new recipes have been few and far between, but growing two humans has turned out to be a lot harder than I anticipated! The early months of all my pregnancies so far have left me not wanting to eat much chocolate, but I am glad to say that here in my second trimester I am loving it all over again.

This chocolatey spin on the classic Southern candy is sure to be a hit for this holiday season with your chocolate loving family and friends. Don’t let candy making intimidate you, these are really easy to make with just a few simple ingredients and they are irresistibly delicious. Whether you keep them for yourself or share them with those you love, I hope you enjoy them!

Chocolate Pralines

Yield 10 -12 pralines

Ingredients

  • 3/4 c sugar
  • 1/4 c + 2 Tbs brown sugar
  • 3 Tbs butter
  • 1/4 c whole milk
  • 1/4 tsp kosher salt
  • 1/2 tsp vanilla
  • 2 oz 60% cacao chocolate, chopped
  • 1 c pecans, toasted

Instructions

  1. Line a baking pan with parchment paper or baking mat and set aside.
  2. In a large sauce pan mix together sugars, butter, milk and salt using a wooden spoon.
  3. Cook over medium high heat until the mixture begins to boil, stirring occasionally.
  4. Clip your candy thermometer to the side of the pan once it begins to boil and stir constantly.
  5. Boil the mixture until it reaches between 238º and 240º F on the thermometer, about 3-5 minutes.
  6. Remove the pan from the heat and working quickly add the chocolate and toasted pecans.
  7. Begin stirring, stir the mixture until it starts to look cloudy and creamy, less than 5 minutes.
  8. Drop the mixture by spoonfuls onto the prepared pan and let cool for 10 minutes.
  9. You can serve them warm or cool completely and store in an airtight container at room temperature for up to 5 days.
