We just returned late last Thursday from vacation, I had about a week off from blogging and the kitchen, it was so nice. But now I’m back and today I’m sharing this delicious smoothie that will have you dreaming of summer days. Vacation for most people I think involves a little bit of indulgence, at least I know it does for me! With that said about 3 days in to this trip I declared I needed to eat more fruits and veggies upon arriving home.

One of my favorite ways to enjoy all that good for you fiber fruits and veggies supply is in smoothie form. I’m a bit of a fanatic when it comes to these frozen wonder drinks and I’ve passed my love on to my kids. Plus I just love how they will eagerly try almost anything when it’s in a smoothie – honestly my toddler will drink practically anything that comes out of a straw!

With that said, it’s pretty common to find us in the kitchen together raiding the freezer for our next smoothie variety. Which leads me to the story behind today’s recipe: Years ago when I was a teenager I used to sleep as late as physically possible on school days. I’d shower, dress and then speed off to school (we lived about 15 miles from my school). Seriously, I grew up in the middle of nowhere!

Of course all that rushing around meant skipping breakfast most mornings and if I had an extra minute or two I would throw a handful of frozen strawberries into a glass, top it with orange juice and dash on my way. The orange juice would form a frozen layer around the strawberries as they began to defrost slightly, it was hands down my favorite “breakfast”.

Even after all these years, one of my favorite smoothies is still the classic strawberry and citrus combo. Banana, mango, pineapple and strawberry combine in this delicious, refreshing smoothie you’ll love to drink any time of the day. I hope you’ll get a chance to try it soon, it’s so quick and easy to make, enjoy!

Sunrise Smoothie

Yield 2 servings

Ingredients

  • 1 c orange juice
  • 1/2 ripe banana, frozen
  • 1/2 c frozen mango
  • 1/2 c frozen pineapple
  • 1/4 c water, if desired for a thinner consistency
  • 1/2 c strawberries

Instructions

  1. Place the orange juice, banana, mango and pineapple in your blender and puree until smooth.
  2. Add additional water for a thinner consistency if desired.
  3. Pour 2/3 of the mixture between two glasses and add the strawberries to the remaining mixture in the blender.
  4. Puree until smooth and pour the strawberry smoothie mixture in the glasses, dividing it between the two.
  5. Serve immediately.

    Nice story! I never thought of orange juice poured over frozen strawberries. I’ll have to try that on my next hectic day. I like bananaritas too. Lots better than banana bread. Ha!

      Hannah depending on if you use all frozen fruit and add a little water to thin the consistency the servings should be about 10 ounces.
