This recipe is as good as it sounds! As I was unpacking my kitchen (we just moved = yay!) I realized I had several jars of peanut butter that I am going to need to use before too long. I also had some bananas that needed to be eaten, or in my opinion baked or frozen. I love me some slightly green bananas, but once they spot I won’t eat them. I was perusing Tastespotting and I came across this recipe and I just knew I had to make it. Ingredients:
1/2 c coconut oil
1/2 c peanut butter
1/4 c brown sugar
1/4 c sugar
1 egg
1 tsp vanilla
4 large ripe bananas, mashed
1 c whole wheat flour
1 c all purpose flour
1/3 c cocoa powder
1 1/4 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/2 c almond milk
1 c chocolate chips
Directions:
Preheat your oven to 350º and prepare a large loaf pan with cooking spray. Whisk together the flour, baking powder, cocoa, cinnamon and salt in a bowl and set aside.
In the bowl of your stand mixer cream the coconut oil and peanut butter, add the sugars and beat until fluffy, about 3 minutes. Add the egg and vanilla, mixing until combined. Next add the bananas and mix well. Slowly add the dry ingredients, until just combined. Stir in milk, one tablespoon at a time. Fold in the chocolate chips and transfer the batter to your loaf pan. Bake for 50 minutes, or until a tester comes out clean.
Yields 1 loaf
