Ingredients:
12 oz. Broccoli, chopped
2 boneless, skinless Chicken Breasts
Salt & Pepper, to taste
2 tbs Butter
1 ½ tbs Flour
½ c milk
1 c Shredded Cheddar Cheese
Directions:
Preheat oven to 400 degrees F. Steam the broccoli for about 5 minutes, rinse in cold water once it is done. Meanwhile, season chicken breasts with salt and pepper, then brown for 2 minutes each side in a saute pan. Place in a 8×8 baking dish. To make the cheese sauce, melt the butter in a saucepan, add the flour and whisk until it is silky smooth. Let it turn slightly tan, then pour in the milk, whisk quickly until the roux is dissolved. Next add the grated cheese and stir until the cheese is melted, then add the spices to taste. Pour the mixture over chicken and broccoli, and bake for 20 minutes.
