Blueberry + Kiwi, really? Yes, trust me. Really? OK so maybe your thinking kiwi is just something you put on fruit pizza. I’ll admit it is one of those fruits I have commonly overlooked. However, my new found love of kiwi is actually a credit to my daughter. Since they are full of vitamin C and soft = easy to eat, I buy them quite frequently for her. It’s no surprise that I have eaten a few bites of my own recently while slicing her up some. The other day at the store while grabbing a couple of kiwi, I also picked up a container of fresh blueberries. But it wasn’t until Sunday that the idea of combining the two into something sweet actually occurred to me. At first I was thinking of making muffins or some sort of tart, but I really wanted to make a dish that the fruit was the star of. A blueberry kiwi crisp just seemed like the best way to enjoy these two delicious fruits together, so I whipped this little one serving treat up for myself. It was tart, sweet, fresh and light all at the same time, the recipe below is for a single serving, but you may need to double, triple or even quadruple it to have some leftovers. Whether warm out of the oven, with a dollop of whip cream or scoop of vanilla ice cream; this fresh summer treat is one that I am sure you’ll enjoy for months to come, happy baking!
