Well you know how I love muffins. So and when I came across this recipe I couldn’t help myself, I copied it down and saved it for a moment of inspiration – that moment came today. So I broke out my brand new double dark dutch process coca that I received as part of a Christmas present and whipped up a batch of these little guys. That’ right, you know I made them mini!
Double Chocolate Chocolate Chip Muffins

Ingredients:
1 c self-rising flour
1/2 c sugar
2 1/2 tbs cocoa powder
4 oz chocolate chunks or chips
1/2 c vegetable oil
1/2 c buttermilk
1 egg, lightly beaten
1 tsp pure vanilla extract
Directions:
Preheat oven to 350 F. Line a muffin tray with paper liners. Mix all of the dry ingredients together and make a well in the center. Mix all of the wet ingredients together and pour into the well. Add the chocolate chips and mix until combined. CAUTION: Do not overmix – this will result in tough muffins! Spoon batter into liners and bake 15-20 minutes, 10-11 for mini muffins. Cool and then enjoy.
