Well we just got back from a wonderful, exciting, week-long vacation. It was nice to relax, take it easy and spend sometime with family, but after a week of no cooking – I was really looking forward to some time in the kitchen. When we headed home from the beach, my mother-in-law sent some fruit home with us and so I decided to bake some banana muffins. This recipe is a combination of a few of my favorite things: bananas, chocolate, oats and macadamia nuts.
It might seem like an odd combination, but I thought that it would be delicious and it was. Despite the long, convoluted name, they are really easy to make and only take about 20 minutes to bake. So if you are feeling like a little something different, get up, head to the kitchen and make these tasty little muffins. Try and wait a few minutes to let them cool – you know, so you don’t burn your tongue. Enjoy and happy baking!
Chocolate Chip Oat Macadamia Banana Muffins

Ingredients
- 3 bananas
- 1 egg
- 1 c sugar
- 1 tsp vanilla extract
- 1/4 c oil
- 1/2 applesauce
- 1 c flour
- 1 c of oats
- 1/4 c chopped macadamia nuts
- 1/2 c chocolate chips
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
Instructions
- Preheat your oven to 375º F.
- Mash the bananas and add them to the bowl of your mixer.
- Beat together the banana, egg, sugar, vanilla, oil and applesauce on medium speed.
- Add the flour, salt, baking powder and baking soda at low speed and beat until moist.
- Fold in the nuts and chocolate chips, then spoon the mixture into muffin pans and bake for 20-25 minutes, until tester comes out clean.
