While we were away on vacation my dear sister bought me some Saigon Cinnamon. Well as you may know we love cinnamon in our house, so I decided to try it out by making some cookies. I wasn’t really in the mood to roll out cookie dough, so I decided to roll the dough into pinwheels instead. These cookies are quick and easy to make, and the cinnamon sugar on top gives them just the finish they need – “cinna–licious” as my husband put it. Cinnamon Swirl Cookies

Ingredients:
6 tbsp butter, softened
1/2 c and 1 tbsp packed brown sugar
1 tsp ground cinnamon
1/8 tsp baking powder
1 egg
1 tsp vanilla extract
1-1/2 c all-purpose flour
2-1/4 tsp superfine sugar
1/4 tsp cinnamon
1 egg white, beaten
Directions:
Preheat the oven to 375º F. Line cookie sheets with parchment paper. In the bowl of your mixer, cream together the butter and brown sugar until smooth. Mix in 1 tsp of cinnamon, baking powder, egg, and vanilla. Stir in flour by hand using a wooden spoon, as the dough will be stiff. Roll out tsp sized pieces of dough into 6 inch long ropes. Curl the dough in a spiral shape to make a swirl cookie. Place cookies 2 inches apart on the prepared cookie sheets. Brush cookies with egg white. Mix together the remaining cinnamon and superfine sugar in a small bowl. Sprinkle this over the swirls. Bake cookies for 8 minutes in the preheated oven, or until the bottoms are lightly browned. Let cool on the baking sheet for about 5 minutes before removing to wire racks to cool completely.
