MUFFINS! Let me just say that I love muffins! I love fruit ones, cinnamon ones, chocolate ones, oh how I love them 🙂 So my hubby and I were watching TV and I was flipping through a cooking magazine and there they were, calling out to me – lemon blueberry muffins. I just had to make them, so I went into the kitchen and started pulling out the ingredients and making the muffin batter. Then I realized that I didn’t have my lemon juice, so I substituted it for lime, and it was a happy accident, so delicious!
To quote my boss, “they are like little lime blueberry crack”. Flattered I was and really pleased and amused by her response. I love making people happy with the food I bake, because it makes me happy too. Anyway so here’s the recipe, enjoy and go make yourself and others happy too!
They were so yummy too. I loved them I think that your boss may be right, not that I have ever tried crack, but they were friggin awesome. The glaze made all the difference too and who doesn’t love lime?
