I love soup, like could eat it everyday if it weren’t so crazy hot in Florida love soup! Growing up potato soup was always my favorite, my great gramdmother who was German used to make a simple potato, onion, butter and milk soup that I adored. I occasionally still make it some days, but I’ve grown to love my potato soup with a little extra goodness.
Creamy Potato and Ham Soup is thickened with mashed potatoes and loaded with cheese, ham and diced potatoes. Rich and satisfying this soup will warm you up when the weather is cool out, it makes the perfect amount for two or an extra for leftovers. Whether you’re sweating it out like me here in Florida this winter or trying to stay warm in the chilly parts of the states, I hope you’ll enjoy this Creamy Ham & Potato Soup for Two as much as I do, enjoy!
Creamy Ham & Potato Soup
- 2 Tbs Butter
- 1/4 C Onion
- 1 C Chicken stock
- 3/4 C Water
- 1 C Mashed potatoes
- 1/2 C Diced potatoes
- 1/2 C Diced ham
- 1/2 C Shredded cheddar cheese
- 1 Tbs Sea salt
- 1/2 Tsp Pepper
In a medium sized saucepan melt the butter and sauté the onion until tender, about 3-4 minutes.
Add the chicken stock, water and mashed potatoes, stir until smooth, about 5 minutes if your using chilled leftover mashed potatoes.
Add the diced potatoes, diced ham, shredded cheese, salt and pepper. Cook for about 10 minutes, serve warm.
