Creamy Ham & Potato Soup

Ingredients

  • 2 Tbs Butter
  • 1/4 C Onion
  • 1 C Chicken stock
  • 3/4 C Water
  • 1 C Mashed potatoes
  • 1/2 C Diced potatoes
  • 1/2 C Diced ham
  • 1/2 C Shredded cheddar cheese
  • 1 Tbs Sea salt
  • 1/2 Tsp Pepper

Instructions

  1. In a medium sized saucepan melt the butter and sauté the onion until tender, about 3-4 minutes.

  2. Add the chicken stock, water and mashed potatoes, stir until smooth, about 5 minutes if your using chilled leftover mashed potatoes.

  3. Add the diced potatoes, diced ham, shredded cheese, salt and pepper. Cook for about 10 minutes, serve warm.
