This crunchy, tangy, sweet Ginger Cashew Chicken Salad makes the perfect lunch or light dinner.
It’s Feast + Devour time again y’all! Every month members of the group share recipes featuring one ingredient as the focus of the recipe and this month the special ingredient is Cabbage. It may not be so great for baking into desserts but it just happens to be a key ingredient in my latest obsession – Ginger Cashew Chicken Salad.
This salad is inspired by a favorite lunch of mine, the Chinese Citrus Cashew Salad with Chicken at Panera. Trust me you don’t even want to know how many times I haven eaten over the past year and a half, it’s kind of embarrassing. I can’t resist a good restaurant that serves real food and has a drive-thru. As a mother of twins Panera drive-thru is a dream, especially for those days when all I want is a sandwich, salad or some soup and can get it without having to drag the circus of more than one baby into a restaurant to achieve it.
It combines chicken, crunchy Napa cabbage, romaine lettuce, cucumbers, pineapple, mandarin oranges and cashews and is topped with ginger salad dressing. It ticks all the boxes for a satisfying lunch and is perfect for making you feel like summer even in the coldest months of the year, I hope you’ll give it a try soon and enjoy!
Ginger Cashew Chicken Salad

Ingredients
- 2 c Romain lettuce, chopped
- 1 c Napa cabbage, shredded
- 1 c cooked chicken, chopped
- 1/2 c cucumber slices
- 1/3 c pineapple chunks
- 1/3 c mandarin orange sections
- 8 Tbs Ginger Salad Dressing
- 1 Tbs lime juice
- 1/3 c roasted cashews, chopped
- 1 Tbs fresh cilantro, chopped
Instructions
- In a large bowl combine the first six ingredients.
- In a small bowl whisk together the salad dressing and lime juice.
- Pour the dressing mixture over the salad and garnish with cashews and cilantro.
- Serve immediately.
