Maple Pears

These baked pears have all the delicious flavors of a pie with out the guilt of the crust and bake in half the time, serve it with a dollop of Greek yogurt and a drizzle of maple syrup or a scoop of vanilla ice cream for the perfect start or end to your day.

Growing up out in the country afforded me a lot of time outside, we used to live next to a lot that was filled with pear trees. Not only did we love to climb those trees, we loved eating the pears! I have always been a bit of a snob when it comes to pears, I blame it on the firm, mildly sweet Sand Pears that I grew up on.

These baked pears have all the delicious flavors of a pie with out the guilt of the crust and bake in half the time! Juicy pears tossed with maple syrup and crunchy pecan bits, this dessert is delicious and low fat. Serve it with a dollop of Greek yogurt and a drizzle of maple syrup or a scoop of vanilla ice cream. Ingredients

for the pears:

  • 2 medium pears, peeled and cubed (about 2 c)
  • 2 Tbs pecans, chopped
  • 2 Tbs ground flax meal
  • 2 Tbs maple syrup
  • 1 Tbs lemon juice
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon

for the topping:

  • 1/4 c Greek yogurt
  • 2 tsp maple syrup

Instructions

  1. Preheat your oven to 350º and prepare two small baking dishes with cooking spray.
  2. In a bowl combine the pear, pecans, flax meal, maple syrup, coconut oil and vanilla; toss to coat. Spread the mixture into your baking dishes and bake for 25-30 minutes, until golden.
  3. Let cool 5 minutes and top each with 2 Tbs of Greek yogurt and a drizzle of maple syrup, serve warm.
