My husband loves cookies, I mean LOVES! Whenever we are near the mall he always has to go to the Great American Cookie Company, cookie cake, double doozies; you name it he loves them. On a fairly regular basis, despite my disappointed protesting he brings home cookies from the grocery store bakery and always a few go stale. Maybe it is because we didn’t have a lot of money when I was growing up or maybe because my great grandmother (who lived through the Great Depression) lived with us for a few years, but throwing out food always makes me sad.

As you know I love to bake and despite my love hate relationship with cookies, mainly baking them – I often end up with flat, unappealing cookies. Yesterday I decided to make my hubby some sugar cookies, he’s a vanilla kind of guy and loves sugar cookies with icing and/or sprinkles. I am giving these cookies my stamp of approval, because yes… even I ate one! I have to admit it, they turned out really good = a delicious, soft sugar cookie you can customize to your hearts desire. Enjoy and happy baking!
Sugar Cookies
Yield 1 1/2 dozen cookies
Ingredients
- 1 1/4 c flour
- 6 Tbs butter
- 1 egg
- 1/2 c sugar
- 1/2 tsp vanilla
- 1/2 tsp baking powder
- 1/8 tsp salt
Instructions
- In the bowl of your stand mixer cream the butter for 1 minute and then add the sugar, baking powder and salt, mix to combine.
- Add the egg and vanilla and mix until smooth, slowly beat in the flour on low, finish scraping the dough together with a spoon.
- Transfer dough to wax paper and flatten, wrap in plastic and refrigerate for 2-3 hours, until firm.
- Roll the dough out 1/4" thick and cut into desired shapes. Bake at 350º for 8-9 minutes.
- Remove and cool on pan 2 minutes, then transfer to wire racks and cool completely.
- Frost or decorate as desired and serve.
