Baked Eggs

You know I love breakfast and baking, well this recipe is the best of both worlds. I really enjoy searching Pinterest for new recipes and ideas of what to make for breakfast/lunch/dinner. Well last week a friend of mine came over for brunch and I decided to make baked eggs, I had seen a dozen or so variations on this dish and decided to give it my own spin. These are really delicious and you can customize your fillings to your taste. Also you can make up a few extra and have them on hand for the next morning – because if your anything like me you need something quick and easy instead of wasting your time staring in the fridge/pantry trying to decide what to eat! So without further delay here’s how I made them:

Ingredients:

1 round of toast

1 1/2 – 2 tbs spinach, fresh or thawed
1 strip of crisp bacon, crumbled
1 tbs grated cheese
dash each of salt and pepper

1 egg

Directions:

Preheat the oven to 350º, spray a ramekin and place on a cookie sheet. Place in toast, I used baguette, but anything will work. Next spread some spinach on I used fresh but you could use frozen – if you do thaw it and squeeze out the water. Next top with shredded cheese and crumbled bacon. Add salt and pepper, I really like Nature’s Seasoning. Last but not least top with a cracked egg. Bake for 20-25 minutes until the white is set. Cool for 5 minutes and enjoy!
