1 1/2 – 2 tbs spinach, fresh or thawed
1 strip of crisp bacon, crumbled
1 tbs grated cheese
dash each of salt and pepper
Preheat the oven to 350º, spray a ramekin and place on a cookie sheet. Place in toast, I used baguette, but anything will work. Next spread some spinach on I used fresh but you could use frozen – if you do thaw it and squeeze out the water. Next top with shredded cheese and crumbled bacon. Add salt and pepper, I really like Nature’s Seasoning. Last but not least top with a cracked egg. Bake for 20-25 minutes until the white is set. Cool for 5 minutes and enjoy!
