
So I do a lot of jumping from one website to the next, what can I say? I like to look at yummy food! Anyway, I ran across this recipe and thought it looked too good not to try. So for the first time in 2 weeks I decided to bake. During my pregnancy I had a lot of missteps in new recipes, I would forget an ingredient or not have something on hand that I needed (like a baking pan). Do you ever do that? Well whenever I rush into a recipe without really reading it, or maybe it’s the preoccupation with the baby, whatever it is, it takes me forever to get it into the oven it seems like. Well needless to say this was no exception – I mean, there are quite a few steps to making these brownies happen. But if you’re in the mood for some chocolate & peanut butter and have some extra time, whip these together, there are plenty to share!
Peanut Butter Swirl Brownies
Ingredients:
Brownies:
1¼ c all-purpose flour
1 tsp salt
2 tbs unsweetened cocoa powder
11 oz chocolate chips
1 c unsalted butter, cut into 1-inch pieces
1½ c granulated sugar
½ c brown sugar, packed
5 eggs, room temperature
2 tsp vanilla extract
Peanut Butter Topping:
½ c unsalted butter, melted
1 c powdered sugar
1½ c peanut butter
½ tsp salt
1 tsp vanilla extract
Directions:
Preheat the oven to 350 degrees, spray a 9×13-inch pan with baking spray. Whisk together the flour, salt, and cocoa powder in a medium bowl. In a double boiler melt the chocolate and butter, stirring occasionally, until melted and smooth. Remove from heat, keep the bowl over the water and add the sugars. Stir until completely combined, and remove from the pan, mixture should be room temperature. Add 3 of the eggs to the chocolate mixture and mix until combined. Add the remaining eggs and the vanilla and stir until combined. Sprinkle in the flour mixture over the chocolate mixture. Using a rubber spatula fold the flour mixture into the chocolate, then pour the batter into your baking pan. Now whisk together the peanut butter swirl ingredients and drop dollops of the swirl mixture over the top of the brownie batter. Using a butter knife, swirl the peanut butter into the brownie batter. Run your knife crosswise and lengthwise through the batters. Bake for 38-40 minutes, tester should come out with a few crumbs on it. Let cool and cut into squares to serve.
