Honey Lime Vinaigrette + Apple Berry Pecan Salad is quick, easy and makes a great summer lunch or light dinner!

Honey Lime Vinaigrette

This week I have been working out pretty hard, with the exception of yesterday – everyone needs a rest day now and then, so I have been trying really hard to cut down on the sweets and eat healthier meals and snacks. I was at the grocery store the other day and there just happened to be a really great sale on some fresh produce, so I decided it was time to make some salads.

I have a confession, try not to laugh, please! As simple and easy as salads are to prepare I have always kind of hated to make them. I don’t know if its the prep work or the fact that I never really used to consider them much of a “meal” but luckily it is just one of those silly habits I have seemed to overcome! With that said, as a kid I always chose Ranch dressing when I did eat salad, something else I have out grown as well. Ask me today and I will happily choose a nice homemade vinaigrette dressing over a store bought bottle of the creamy stuff.

A little sweet and a little tangy, this Honey Lime Vinaigrette is the perfect addition to this Apple Berry Pecan Salad. I love the lightness of this citrusy vinaigrette paired with the crunchy apples, pecans, mixed greens and berries. Have it for lunch or along side a nice piece of grilled chicken or fish and you’ve got one great, easy summer dinner. I hope you’ll enjoy it as much as I do, have a great weekend!

Honey Lime Vinaigrette + Apple Berry Pecan Salad

Prep 5 mins

Total 5 mins

Yield 1 c dressing + 1 salad

dressing makes about 1 cup

Ingredients

  • 1/2 c lime juice
  • 1/4 c lemon juice
  • 1/4 c light tasting olive oil
  • 2 Tbs honey
  • salt and pepper to taste
  • 1/4 c apple, peeled and diced
  • 1/4 c blueberries
  • 3 medium strawberries, sliced
  • 1 1/2 c spring mix salad
  • 1 Tbs pecans

Instructions

  1. Whisk together the lime juice, lemon juice, olive oil, honey, salt and pepper, store in a glass jar with lid.
  2. To a bowl add the spring mix salad, evenly arrange the apple, blueberries, strawberries and pecans over top.
  3. Drizzle with the dressing and serve immediately.

Courses salad, side dish
