Apple Cinnamon Pie Pops

I saw these little cuties a few weeks ago on “Our Best Bites” and I knew I had to make them! They spoke to me and so I decided to give them a try and show my co-workers a little love for Valentine’s Day. Let me just say that while they aren’t too hard to make, they aren’t too easy either. Don’t ask me why I thought making these while 7 months pregnant was a good idea. By the time I finished them off, my back was sore and I was ready to melt into the couch. Needless to say, if they weren’t so cute, they wouldn’t have been worth the effort, so thank goodness for that! Now that your motivated to whip up a batch of your own, here’s how you do it.

Apple Cinnamon Pie Pops

Ingredients:

1 Pie dough, store bought like I used – or homemade
2″ heart-shaped cookie cutter, or any shape for that matter
6″ Lollipop sticks

Filling:
1 small apple
1/4 tsp cinnamon
1 tbs butter
1 tbs packed brown sugar
1 tbs flour
1/2 tbs lemon juice
1/4 c cinnamon chips

Glaze:
1/4 c powdered sugar
1/2 tbs butter
1-2 tbs milk

Directions:

Preheat oven to 375 degrees. Roll out the dough, cut hearts using your cookie cutter, you’ll need two hearts for each pop. Place 1/2 tsp of filing on one side making sure to keep it at least 1/4-inch away from the edges, sprinkle in a few cinnamon chips. Insert the lollipop stick and wet the edge, place the top heart on and crimp the two together. Pierce the pops with a fork, place on a cookie sheet lined with parchment paper and bake for 15-20 minutes, cool on racks and drizzle with glaze. Wrap and share with some friends!
