Okay, as promised I finally baked! I have been craving some muffins lately, but since I am trying to be healthy (recovering from pregnancy is no easy task you know) I wanted to ensure I didn’t have to eat them all by myself. Have you ever seen this video on youtube, my friends know it’s one of my favorites, I have probably watched it at least a dozen or so times. Well with that said, I decided to make muffins that everyone would love, Apple + Cinnamon = crowd pleaser. This recipe is simple and easy, you probably even have everything on hand to make them. So head on into the kitchen and mix yourself up a batch of these beauties. Remember muffins aren’t just for breakfast, these are delicious warm, but they would be even more amazing sliced in half with a scoop of vanilla ice cream on top. Enjoy and happy baking!
Apple Cinnamon Muffins
Ingredients:
2 c Flour
1 tsp Baking Powder
½ tsp Baking Soda
¼ tsp Nutmeg
½ tsp Salt
½ c Cinnamon Chips
½ c Butter, Room Temperature
½ c Granulated Sugar
½ c Brown Sugar
2 Eggs
1 tsp Vanilla Extract
1 c Apples, Finely Chopped
Directions:
Preheat oven to 375 degrees and line muffin tins with paper liners. In a medium bowl, whisk together flour, baking powder, baking soda, nutmeg, and salt, then add the cinnamon chips and stir. In the bowl of an electric mixture on medium speed, beat together butter, sugars, and eggs until fluffy, reduce speed and add vanilla. Then stir in the apples and fold the wet mixture into the flour. Spoon the batter into paper liners and sprinkle brown sugar over the muffin batter. Bake for 20 minutes, or until tester comes out clean. When finished, allow to cool 5 minutes in the pan, then transfer to a wire rack to finish cooling.
