Gooey Caramel Brownies

Thick and fudgy, these Gooey Caramel Brownies are the perfect end to any meal.
So you may have noticed a little difference today, that’s right, I took the plunge and registered my URL finally! It is something I have been toying with since the beginning of the summer and last night I decided to go for it. As you may or may not know last week was my birthday and I received a new cookbook from my mom, I have a serious cookbook addiction.
My newest book is called Brownie Points and as you can guess is an entire cookbook of brownie/brownie related recipes. I was in the car on my way out to celebrate when I opened the package from my mom, so I only thumbed through the book for a few minutes making little mental notes about which brownies to try first.
If you know or want to know anything about me, it’s that I am hopelessly addicted to caramel. This recipe I am sharing today is a slightly modified version of the Inner Peace Caramel Brownies, which wow – are amazing! I wasn’t too sure about the recipe when I started out, caramel mixed into the batter instead of swirled? But let me just say that after they had cooled and I sliced in to them, boy was I in love. I just know you are going to love these Gooey Caramel Brownies too – enjoy and happy baking!

Gooey Caramel Brownies

Ingredients

  • 3/4 c sugar
  • 1/2 c caramel sauce, I used store bought
  • 8 Tbs butter
  • 4 oz chocolate, chopped – I used 2 oz of Baker's chocolate and 2 oz of milk chocolate chips
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/4 tsp sea salt
  • 3/4 c flour

Instructions

  1. Preheat your oven to 350ΒΊ and prepare an 8"x8" baking pan with butter and parchment, set aside.
  2. In a medium sized bowl melt the sugar and butter in the microwave, about 2 minutes.
  3. Add the chocolate and stir until smooth, then stir in the caramel sauce.
  4. In a separate bowl whisk the eggs and then quickly whisk them into the chocolate mixture, so they do not scramble.
  5. Add the vanilla, sea salt and flour and stir until the batter just comes together.
  6. Spread the batter into the pan and bake for 25 minutes.
  7. Remove from the oven, cool completely; slice and serve.

    mmm I love my brownies gooey and sticky so these look perfect for me! Just wondering about the caramle sauce – did you make it yourself? And when did you add it?

      Stir in the caramel right after the chocolate is smooth, it was late so I used store bought, the kind used for ice cream topping, but you could definitely make your own.

    We all love brownies (who doesn’t?) but never tried with caramel sauce. I love the idea and definitely going to try!
