Candy Surprise Oatmeal Cookies

Monday is 2 years of wedded bliss! Since my hubby is taking the Florida Bar on Tuesday and Wednesday I decided that I would spoil him today, so I made shrimp and scallop fried rice and baked these cookies just for him. Now about these cookies, you know my guy loves his peanut butter and I love trying new recipes, so it just seemed to fit. Check out the recipe below.

Candy Surprise Oatmeal Cookies

Ingredients:

Your Favorite “Fun Size” chocolate candy, frozen

1 c all purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 sticks of butter, softened

1 c granulated sugar

1/4 c packed brown sugar

1 large egg

1 tbsp vanilla extract

2 1/2 c old fashioned rolled oats

Directions:

Freeze your “Fun Size” candy for at least 2 hours before preparations begin. When your ready, start by preheating the oven to 350F and spray your baking tray. Next in a medium sized bowl, whisk together flour, baking powder and soda, and salt. In the bowl of your stand mixer, beat together the softened butter and both sugars until light and fluffy, remember to scrape the sides. Then add the egg and vanilla and beat again until fully incorporated. Add the flour mixture a little at a time, mixing on slow speed after each addition. Once fully combined, add the oats. Stir the dough by hand one last time. Remove the candy from freezer and unwrap. Scoop out a ball of dough and place it into the palm of your hand, flatten the dough between your palms, and then place a frozen candy in the middle of the dough. Now form the dough around the candy piece until it is completely covered with no cracks. Place the cookie onto your pan and repeat until you have used all the dough, or run out of candy. Bake until the cookies are golden brown, about 16 minutes. Cool the cookies on the pan for 10 minutes, then move to a wire rack. Once cooled, enjoy!

FYI – Be forewarned these cookies spread, I think next time I will cut out a stick of butter and just go with one, happy baking.
