My preschooler is quite the picky eater, gone are the days of her eagerly eating whatever healthy food is placed on her plate. That means I have to get pretty creative most days to get her to still eat healthy without thinking she is being made to do so. Lucky for me almonds are one snack we can always agree on, she eats them almost everyday!
We have yet to find a flavor of Blue Diamond Almonds we don’t love and the lightly salted ones are our newest obsession. Whether we are playing at the park with friends, hanging at the pool or headed to the library for more summer reading, we always have a few snacks and most of the time a picnic ready to be enjoyed. When we are busy in the summer heat, we like to keep our food light, but satisfying to fuel our fun, because everyone knows you can have so much more fun if you aren’t hungry.
The sweet, tartness of the fresh cherries is the perfect complement to the crunchy texture of the almonds and green apples in this quick, delicious almond chicken salad. Spread it on a slice of bread, enjoy it in a pita, on crackers or all by itself, trust me you’re going to fall in love with it too. Cherry Almond Chicken Salad

Ingredients
- 2 c shredded cooked chicken
- 1 c cherries, pitted and chopped
- 1/2 c Lightly Salted Blue Diamond Almonds, chopped
- 1/2 c green apple, chopped
- 1/3 c Vidalia onion, diced
- 1/2 c + 2 Tbs plain lowfat yogurt
- 1/4 tsp sweet basil, dried
- salt & pepper to taste
Instructions
- In a mixing bowl combine all of the ingredients and stir to coat.
- Serve immediately as sandwiches, on crackers or atop salad greens.
- Store in an airtight container in the refrigerator, serve chilled.
