So the other night, I was really wanting a treat and after about an hour of motivation, I finally made it off the couch and whipped these together. If you know anything about me you know I love muffins and I love lemon! Our new baby is almost here and a lot of my friends think I am crazy to still be baking, but I enjoy it and I know there will be several weeks without any, so I figure I should enjoy it now before my break. If your feeling like a late night treat or just something tasty for breakfast give this recipe a try. my apologies for the lack of a picture, like I said, I am almost due, so some things just get forgotten – but you don’t need to see them to know they are good. Lemon Blueberry Muffins…

Ingredients:
2 tbs sugar
1/2 tsp lemon oil
1 c flour
1 tsp baking powder
1/2 tsp salt
3 tbs butter
1/2 c buttermilk
1 tsp vanilla
1 egg
1 c blueberries
Directions:
Mix 2 tbs sugar with 1/2 tsp lemon oil. In a separate bowl whisk the flour, baking powder and salt. In your electric mixer, beat the 5 remaining tbs sugar with the butter. One at a time add the egg, buttermilk, vanilla and lemon sugar. Beat in the flour mixture until smooth. Gently fold in the blueberries and spoon the batter into your muffin pan. Top with honey vanilla sprinkles and bake at 375 for 11 minutes. Try to let them cool, before you dig in. Makes 6 muffins.
