Chicken Broccoli Rice Casserole

Okay, so I actually made this last Sunday, but hey – I am almost 37 weeks pregnant, and posting is not exactly the main thing on my mind these days! With that said, I wanted something yummy and healthy for dinner, so I decided to check out the Tasty Kitchen website, where I ran across a chicken & broccoli casserole, and decided to change it up just a bit and add some rice while I was at it, you know to really round out the whole meal and be kind of like a one pot, even though technically it was more like 2 pots and a baking pan. If your feeling in the mood for a savory bake, give this one a shot.

Ingredients:

12 oz.
Broccoli, chopped

2 b
oneless, skinless Chicken Breasts

Salt
& Pepper, to taste
2 tbs
Butter

1
½ tbs Flour
½ c milk

1 c
Shredded Cheddar Cheese

Directions:

Preheat oven to 400 degrees F. Steam the broccoli for about 5 minutes, rinse in cold water once it is done. Meanwhile, season chicken breasts with salt and pepper, then brown for 2 minutes each side in a saute pan. Place in a 8×8 baking dish. To make the cheese sauce, melt the butter in a saucepan, add the flour and whisk until it is silky smooth. Let it turn slightly tan, then pour in the milk, whisk quickly until the roux is dissolved. Next add the grated cheese and stir until the cheese is melted, then add the spices to taste. Pour the mixture over chicken and broccoli, and bake for 20 minutes.
