Ok, so I know that this recipe isn’t baked, but I have to admit it – I LOVE SOUP! I love it when it’s cold outside, I love it when it rains, I even love it when it’s summer and the humidity here is killing me, point is, I just plain LOVE SOUP! Well, with that said, whether you share my passion for liquid meals or not, trust me this is a good one, and with just a few ingredients, you’ll whip this together in no time. Now that you’re ready let’s get started:
Broccoli Cheese Soup

Ingredients:
2 cups Chopped Broccoli
3 cups Chicken Broth
2 Tablespoons Butter
⅓ cup Onion, Chopped
⅓ cup Fresh Mushrooms, Chopped
2 Tablespoons All-purpose Flour
⅔ cups Milk
1 cup Shredded Cheddar Cheese
A few pinches of Pepper
Directions:
In a large pot over medium heat, simmer the broccoli in the broth for 15 minutes. Use an immersion blender to get the broccoli into smaller pieces and thicken the broth. In a separate skillet over medium heat, melt the butter. Then, add the onions and mushrooms, saute for 5 minutes or until lightly browned. Add the flour and mix well, to result in a roux-like texture. Gradually add the milk and stir until thick. Next add the mixture to the broccoli and broth, stir well. Add the cheese, stirring until melted and the pepper. Viola – now you’re done and ready to dig in, enjoy!
