Lemon-Lime Bars

Sweet and tart with just enough of a crust to hold it all together, these refreshing Lemon-Lime Bars are the perfect summer dessert.

One of my co-workers has been asking for lemon bars for a few weeks now, and I didn’t want to disappoint her. Since I am always on the lookout for a new recipe when I ran across this one for lemon-lime bars, I just couldn’t resist. So I decided to bring a batch of these Lemon-Lime Bars into work, they were a huge success.

Not only are they easy to make, they are delicious. Sweet and tart with just enough of a crust to hold it all together. These refreshing little bites are a perfect summer dessert for your next cookout or family dinner. Enjoy and happy baking!

Lemon-Lime Bars

Ingredients

  • For the Crust:
  • ½ cups Butter
  • ¼ cups Powdered Sugar
  • 1 cup Flour
  • ? teaspoons Salt
  • Lime Filling:
  • ½ c Sugar
  • 1-½ Tbsp Lime Juice
  • 1-½ Tbsp Flour
  • ¼ tsp Baking Powder
  • 1 Egg
  • Lemon Filling:
  • ½ c Sugar
  • 1-½ Tbsp Lemon Juice
  • 1-½ Tbsp Flour
  • ¼ tsp Baking Powder
  • 1 Egg

Instructions

  1. Preheat your oven to 350 F degrees.
  2. Grease or spray an 8×8 baking pan. In an electric mixer, beat together butter and powdered sugar on medium speed until creamy.
  3. Turn the mixer down to low and slowly add the flour and salt.
  4. Mix until well combined. Press the dough into the pan and bake for 10 minutes.
  5. While the dough is baking, prepare the fillings.
  6. Mix together the ingredients for the lime filling and lemon filling in a bowl.
  7. Pour the fillings over the crust and bake for 20 minutes, or until the top is slightly golden brown.
  8. Let cool and sprinkle with powdered sugar.
  9. Slice and serve.
