Whether you’re in need of a simple lunch or a lighter dinner recipe to beat the heat this summer, you can’t go wrong with this Chicken Taco Pasta Salad. I love a good cold pasta salad for when the days are long and hot, Florida in the summer isn’t for the faint of heart. One of my favorite pasta salads is this Chicken Asparagus Pasta Salad and I also love this Primavera Pasta Salad.
Today I wanted to share my newest pasta salad obsession, Chicken Taco Pasta Salad. Mini Farfalle Pasta, shredded chicken, black beans, corn, tomato, shredded cheese and cilantro are tossed in a creamy taco dressing, top it with some crushed tortilla chips and dig in! Chicken Taco Pasta Salad
Ingredients
- 1 1/2 c mini farfalle pasta cooked
- 1 c shredded chicken
- 1/2 c corn
- 1/2 c black beans
- 1/2 c fresh tomato diced
- 1/2 c shredded Mexican cheese
- 2 Tbs fresh cilantro chopped
- 3 Tbs Greek yogurt
- 2 Tbs taco seasoning
- 1 Tbs lime juice
- 1/3 c crushed tortilla chips for topping
Instructions

In a large mixing bowl combine the pasta, chicken, black beans, corn, shredded cheese and cilantro.

In a small mixing bowl whisk together the Greek yogurt, taco seasoning, lime juice.

Gently toss the salad mixture with the dressing and serve immediately or refrigerate fro up to 3 days in an airtight container. Top with crushed tortilla chips before serving.
