Yesterday I decided that it was time to bake a treat for my little one and since she isn’t eating that infant cereal much these days I was really wanting to find someway to use it up. I found several recipes for teething cookies and decided to make a batch for my sweet girl. I baked the first batch plain and the second batch I cut into cute Easter shapes, sprinkled with cinnamon. So if you have a little one of your own or know one, give this recipe a go; it’s quick, easy and a hit. Enjoy and happy baking!
Teething Cookies
Ingredients:
1 c flour
1 c dry infant rice cereal
3 tbs cooking oil
ice water
Directions:
Preheat your oven to 425º F. Mix together the flour and cereal. Next stir in the oil and gradually mix a little ice water in (about a 1/4 cup at a time) until a dough begins to form. Roll out to the thickness of a cracker on a floured surface and cut into desired shapes. Bake on a parchment lined cookie sheet for 10-12 minutes, until golden brown. Cool completely before serving. Store the remainder in an airtight container.

Any reason not to use coconut oil in these?
Thanks!
