Oh my goodness how is it already September!? Fall is just around the corner and for me that means it starts with apple recipes. I just love all things apple, so today I am sharing these oh so delicious Apple Cinnamon Crumb Bars. They look impressive and are super easy to make, so it’s a win-win. Baking with apples only makes the irresistible flavor of them more tempting to me, so its no surprise I couldn’t stop eating these.
Every year we try to make it up to the mountains of North Carolina and one of my favorite things to do while we are there is to visit the apple orchard. Barber Orchards is located in Waynesville North Carolina, they not only sell fresh fruit and vegetables, but they happen to have an in-house bakery where you can buy all sorts of delicious apple treats. My favorite is always the apple turnovers and the apple freeze drink. Since we tend to buy an assortment of apples when we visit that means I come home and try to invent new ways to enjoy them. Apple Cinnamon Crumb Bars are a fun twist on crumb topped apple pie, but with less effort and not as long of a wait time for baking. Whether you make these for family or friends this fall I sure hope you’ll enjoy them as much as we do, happy baking!
Apple Cinnamon Crumb Bars
Ingredients
For the filling:
- 2 C Chopped apples
- 1 Tbs Lemon juice
- 2 Tbs Brown sugar
- 1 Tbs Butter
- 1 Tsp Cinnamon
- 1/2 Tsp Corn starch
For the crust:
- 1 1/4 c all purpose flour
- 1/3 c old fashioned oats
- 1/3 c sugar
- 1/2 c butter softened
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1 egg
Instructions

Preheat your oven to 375º F and line an 8”x8” baking pan with foil and coat with cooking spray.

In a medium sized sauce pan combine the filling ingredients and cook over medium heat until the apples are tender, about 5-7 minutes.

In a large mixing bowl combine the crust ingredients and press 1 c of the dough mix into the bottom of your baking pan.

Evenly distribute the apple filling over the crust and then crumble the remaining dough mixture evenly over the apple filling, bake for 30-35 minutes.

Carefully remove the pan from the oven and let cool for at least 10 minutes, slice and serve. Store any remaining bars in an airtight container in the refrigerator for up to 5 days.
