Ingredients:
for the muffins:
1 banana, very ripe – mashed
1 egg
1/2 c greek yogurt
2/3 c sugar
1/2 c orange juice
1 Tbs lemon juice
1 Tbs poppy seeds
2 c flour, I used 1 whole wheat and 1 all-purpose
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
for the glaze:
1/2 c powdered sugar
2 Tbs orange juice
Directions:
Preheat your oven to 375º and line a standard 12 cup muffin tin with paper liners. In the bowl of your stand mixer combine the banana, egg, yogurt, sugar, lemon juice and orange juice. Once the mixture is smooth add the poppy seeds and stir to combine. Sift in the flour, baking powder, baking soda and salt; stir until it just comes together. Spoon the batter into the paper liners and bake for 18-20 minutes. Remove from the oven and cool 10 minutes, drizzle with the glaze and serve.
Yields 12 muffins
