I know I don’t usually post daily, but this week I have the joy and pleasure of being a part of a recipe series and today’s theme is “vegetables” Some foods just scream summer; watermelon, peaches, burgers, fries, popsicles, potato salad. Okay, so maybe I just described your last cookout? But what better addition to your July 4th BBQ than some grilled corn? It’s not baked, it’s not much of a recipe – more like instructions. This is a quick, easy way to add some fresh delicious corn to any meal, rain or shine. No bugs or charcoal required, just a pot of water and a grill pan, or a real grill if you have one. Go on, give this corn a chance at your next meal and enjoy!
Ingredients:
3 fresh ears of corn, shucked
1 Tbs butter
1 Tbs cooking oil
1/2 tsp salt
1/2 tsp pepper
or
1 tsp of your favorite seasoning blend
Directions:
Fill a large pot with water and bring to a boil, add the corn and cover with a lid, cook 3-5 minutes. Remove the corn from the water and drain on paper towels. Heat the oil in a grill pan over medium-high heat, add the corn and cook on each side for an additional 3-4 minutes. Spread the butter over the tops of the corn and sprinkle with seasonings. Serve warm.
