Pumpkin Granola is a a mixture of old fashioned and steel cut oats with pecans and pepitas to give it a little extra crunch, making it a delicious way to start your day!

I love oatmeal when I was pregnant with my first child I ate it every day! The only thing I like more than oatmeal for breakfast is granola, because it’s so crunchy and delicious.

This pumpkin granola is sure to please the pumpkin lover in your or your household this fall, enjoy and happy baking!

Pumpkin Granola

Ingredients

  • 1 c old fashioned oats
  • 1/2 c steel cut oats
  • 1/2 c chopped pecans
  • 1/4 c ground flax meal
  • 1 tsp cinnamon
  • 6 Tbs pumpkin puree
  • 1/4 c Dixie Crystals Dark Brown sugar lightly packed
  • 1/4 c water
  • 2 Tbs pure maple syrup
  • 1/4 c peptitas lightly salted

Instructions

  1. Preheat your oven to 325º F and line a rimmed baking sheet with parchment paper or a baking mat.

  2. In a large mixing bowl stir together the oats, pecans, flaxmeal and cinnamon.

  3. In a medium sized mixing bowl whisk together the pumpkin puree, brown sugar, water and maple syrup.

  4. Stir the wet ingredients into the dry and mix until thouroughly coated. Spread the mixture onto the baking sheet and bake for 20 minutes.

  5. After the first 20 minutes, gently stir the granola so it will evenly bake. Check the granola in 10 minute increments until desired crispness is acheived, I prefer mine crunchy so about 40 minutes baking time total.
