Hey! hey guys, new year, new goals and mine is to bring you a couple of new recipes each month. Last year after the twins were born I kind of took a step back and stopped posting, sorry about that but I am still getting the hang of four kids. My sweet friend Julie mentioned a fun cooking club she hosts and I thought it would be the perfect ease back into the blogging routine. I love chocolate! But then what self respecting woman doesn’t, am I right? No offense if you don’t, but what is wrong with you? Admittedly the only time I don’t like chocolate is while I’m pregnant, so thank goodness those days are behind me! Cake, brownies, ice cream and of course cookies, I want them all when they come in the chocolate variety.
Last month I baked up these tasty double chocolate chunk cookies to share with my kids teachers for the holidays. They were a smashing success and I ate a few too many myself. I finally boxed up the last half dozen and mailed them off to my mom to get them away from my reach, they are that addicting. These cookies are perfect for sharing any time of year, so if you love soft cookies loaded with chocolate flavor then these cookies they are it. I hope you’ll enjoy them too, happy baking!
Chewy Double Chocolate Chunk Cookies

Yield 3 1/2 dozen
Ingredients
- 3/4 c butter
- 1/2 c shortening
- 1 1/4 c brown sugar
- 1 c sugar
- 2 eggs, large
- 1 tsp vanilla
- 3 1/2 c all purpose flour
- 1/2 c cocoa powder
- 1 1/2 tsp baking powder
- 1 1/4 tsp baking soda
- 1 tsp corn starch
- 1 tsp salt
- 11 oz chocolate chunks
Instructions
- Preheat your oven to 350º F.
- In the bowl of your stand mixer or using an electric hand mixer cream together the butter and shortening.
- Add the sugars and mix well, add the eggs and vanilla and beat until fluffy.
- Next add the flour, cocoa powder, baking powder, baking soda, corn starch and salt, mix until well combined.
- Stir in the chocolate chunks and scoop into 1 1/2 Tbs rounds.
- Place the cookies 2" apart on a lined baking sheet and bake for 10-11 minutes.
- Let cool on the pan 5 minutes, then transfer to wire racks and cool completely.
- Store in an air tight container for up to 3 days.
