Honey Roasted Acorn Squash

One of the only vegetables I can get my husband to eat without asking (or kindly insisting) is acorn squash. We eat it all of the time when it is in season, so I decided to step it up just a bit from the normal microwaved squash I serve. I love the quickness and convenience of making acorn squash in the microwave, I mean literally within minutes you have a delicious, healthy side. I still used the microwave, but only to par-cook the squash, then roasting it with honey and cinnamon, which resulted in amazing results. A sweet, hearty side you can be proud to serve to anyone, enjoy and happy baking!

Ingredients:

1 acorn squash, medium
2 Tbs honey
1/2 Tbs butter
1/4 tsp cinnamon

Directions:

Preheat your oven to 375º and line an 8″x8″ baking pan with foil. Slice the acorn squash in half and scoop out the seeds, rinse the squash well and place cut side down on a microwave safe plate, cover and microwave on high for 4 minutes. Carefully remove the squash from the microwave and transfer to the baking pan, place 1/4 Tbs of butter in each half, sprinkle with cinnamon and drizzle the honey on top. Bake the squash for 20 minutes, remove from the oven and cool 5-10 minutes before serving.

Yields 2 servings

*p.s. I know the photo isn’t what I have been putting out lately and I apologize, Daylight Savings really kicked my butt with losing that extra hour of sunlight 🙁
