Thick and fudgy, these Gooey Caramel Brownies are the perfect end to any meal.
So you may have noticed a little difference today, that’s right, I took the plunge and registered my URL finally! It is something I have been toying with since the beginning of the summer and last night I decided to go for it. As you may or may not know last week was my birthday and I received a new cookbook from my mom, I have a serious cookbook addiction.
My newest book is called Brownie Points and as you can guess is an entire cookbook of brownie/brownie related recipes. I was in the car on my way out to celebrate when I opened the package from my mom, so I only thumbed through the book for a few minutes making little mental notes about which brownies to try first.
If you know or want to know anything about me, it’s that I am hopelessly addicted to caramel. This recipe I am sharing today is a slightly modified version of the Inner Peace Caramel Brownies, which wow β are amazing! I wasn’t too sure about the recipe when I started out, caramel mixed into the batter instead of swirled? But let me just say that after they had cooled and I sliced in to them, boy was I in love. I just know you are going to love these Gooey Caramel Brownies too β enjoy and happy baking!

Ingredients
- 3/4 c sugar
- 1/2 c caramel sauce, I used store bought
- 8 Tbs butter
- 4 oz chocolate, chopped β I used 2 oz of Baker's chocolate and 2 oz of milk chocolate chips
- 2 eggs
- 1 1/2 tsp vanilla
- 1/4 tsp sea salt
- 3/4 c flour
Instructions
- Preheat your oven to 350ΒΊ and prepare an 8"x8" baking pan with butter and parchment, set aside.
- In a medium sized bowl melt the sugar and butter in the microwave, about 2 minutes.
- Add the chocolate and stir until smooth, then stir in the caramel sauce.
- In a separate bowl whisk the eggs and then quickly whisk them into the chocolate mixture, so they do not scramble.
- Add the vanilla, sea salt and flour and stir until the batter just comes together.
- Spread the batter into the pan and bake for 25 minutes.
- Remove from the oven, cool completely; slice and serve.

Stir in the caramel right after the chocolate is smooth, it was late so I used store bought, the kind used for ice cream topping, but you could definitely make your own.
