I usually post things that I bake. But since I’ve been pregnant, I haven’t baked as much, which is evident in my lack of regular posts. Sorry, but I promise – I am on the hunt for something tasty to bake. With that said, I wanted to share something I have made recently with you, so here’s a soup recipe that is man-friendly. If you or the guy in your life isn’t too much of a soup person, like my husband, even he will enjoy this recipe, and trust me you will too!
Chicken Bacon Potato Soup
——————————–
Ingredients:
4 medium potatoes, diced
1 large chicken breast, chopped
1/2 small onion
1 14.5 oz can of chicken broth
1 tbs butter
2 tbs flour
2 c milk
2-3 slices of cooked bacon, chopped
Directions:
In a large soup pot boil the potatoes until tender, about 7 minutes, drain and set aside. Over medium/low heat melt the butter in the pan and add the onions and chicken, cook until chicken is done. Next add the chicken broth, whisk in the flour and then add the milk and the potatoes. Simmer on low until the soup thickens, add the bacon and serve. This recipe is great topped with cheese and served with warm bread – enjoy!
