Now let’s talk about making these delicious White Cheddar Asparagus Breakfast Tarts, I am a huge fan of eggs for breakfast. Naturally when I found out that Michigan Asparagus and Cabot Cheese where both sponsoring Brunch Week this year, I knew I wanted to combine the two into an irresistible recipe.
For me nothing is more filling and satisfying at breakfast or brunch than a dish made with egg, add flaky puff pastry, asparagus and smoky white cheddar and I just might end up eating two. Actually I did eat two, and I’m not sorry! Bake these White Cheddar Asparagus Breakfast Tarts for your next brunch or eat them for dinner, either way I just know you’re going to love them too, enjoy and happy baking.
White Cheddar Asparagus Breakfast Tarts #Brunchweek

Yield 4 tarts
Ingredients
- 1 sheet puff pastry
- 1 c shredded white cheddar cheese, I used Cabot White Oak Cheddar
- 6 spears fresh asparagus, cut in half
- 1 Tbs olive oil
- 4 eggs, large
- salt and pepper, to taste
Instructions
- Preheat your oven to 425º and line a baking sheet with parchment paper.
- On a floured surface roll out the puff pastry into about a 12" square.
- Cut the dough into 4 equal squares and fold the edges into a circular tart shape.
- Place the tart shells on the baking pan and prick the bottom of the dough with a fork, bake for 10 minutes.
- Remove from the oven and cool 5 minutes.
- Sprinkle ¼ c cheese over the bottom of each tart and make an indentation in the center of the cheese for the egg, arrange the asparagus around the inside edge of the tart and sprinkle with salt and pepper.
- Bake for 12-15 minutes, until the white of the egg is set.
- Remove carefully from the oven and cool 5 minutes on the pan, serve warm.
