I love summer, and I love a good summer-time dessert with fruit in it. The other night at church our women’s group had an activity and we were supposed to bring either a salad or a dessert. I like salad, but I love dessert, so it was pretty obvious what I would be signing up for. I have had this gigantic bag of frozen peaches eating up a large portion of my freezer space, so I knew whatever I baked was going to have some of them in it. Something inside me said thrown in some blueberries, so I thought – the more the merrier. Served with a scoop of ice cream, a dollop of whipped cream or all by itself; this dessert is a delicious blend of fruit, that’s not too sweet and not too tart, and the crunchy topping is the perfect finish. Enjoy and happy baking!
Ingredients:
3 c peaches
3/4 c blueberries
1 c oats
1/3 c granulated sugar
1/3 c brown sugar
1 tsp cinnamon
1/8 tsp salt
1/4 c butter, melted
Directions:
Preheat your oven to 350º and spray a 13″x9″ pan with baking spray, spread the peaches over the bottom of the pan. In a bowl whisk together the oats, sugar, cinnamon and salt, add the butter and stir until a crumbly texture forms. Sprinkle the oat topping over the peaches and blueberries. Bake for 35 minutes, remove from oven and cool 15 minutes before serving.
p.s. I ate mine for breakfast with a splash of almond milk = delicious!
