  • 1 1/2 c mini farfalle pasta cooked
  • 1 c shredded chicken
  • 1/2 c corn
  • 1/2 c black beans
  • 1/2 c fresh tomato diced
  • 1/2 c shredded Mexican cheese
  • 2 Tbs fresh cilantro chopped
  • 3 Tbs Greek yogurt
  • 2 Tbs taco seasoning
  • 1 Tbs lime juice
  • 1/3 c crushed tortilla chips for topping


  1. In a large mixing bowl combine the pasta, chicken, black beans, corn, shredded cheese and cilantro.

  2. In a small mixing bowl whisk together the Greek yogurt, taco seasoning, lime juice.

  3. Gently toss the salad mixture with the dressing and serve immediately or refrigerate fro up to 3 days in an airtight container. Top with crushed tortilla chips before serving.
