Ham & Veggies Breakfast Casserole

  • 4 extra large eggs
  • 1/4 c heavy cream
  • 1/4 c milk
  • 1/2 c shredded cheddar cheese
  • 1/2 c ham
  • 1/2 c diced red potatoes
  • 1/2 c diced ham
  • 1/2 c onion pepper mix
  • salt and pepper to taste


  1. Preheat your oven to 375 F and spray an 8”x8” baking pan with cooking spray.

  2. In a large bowl whisk together the eggs, heavy cream and milk. 

  3. Stir in the cheese, veggies and salt and pepper, pour the mixture into your prepared baking pan and bake for 25-28 minutes, until the center is set.

  4. Let cool 5-10 minutes, slice and serve warm.
