Chocolate Pumpkin Muffins






  1. Preheat oven to 375ยบ F and line a muffin pan with paper liners.
  2. In a mixing bowl whisk together the flour, cocoa, baking powder, baking soda and salt.
  3. In a large mixing bowl melt the butter in the microwave, about 45 seconds.
  4. To the butter, stir in the sugar, pumpkin puree, egg, milk and vanilla extract.
  5. Add the dry ingredients to the wet and stir until just combined, fold in the chocolate chips.
  6. Divide the batter among the paper liners and sprinkle the remaining chocolate chips on top of the batter.
  7. Bake for 15-18 minutes, until a tester comes out with just a few crumbs.
