Chocolate Chip Pumpkin Cookies

Chocolate Pumpkin Cookies {Egg-free}






  1. Preheat your oven to 375ยบ F and line two baking sheets with parchment or baking mats and set aside.
  2. In the bowl of your stand mixer cream the sugars, coconut oil, pumpkin puree and vanilla.
  3. Mix until light fluffy.
  4. In a bowl whisk together the flour, baking soda and ground cinnamon.
  5. Add the dry mixture into the wet and stir until combined, it will be thick.
  6. Stir in the chocolate chips.
  7. Measure the dough into 1 Tbs scoops and place on the baking sheets 2" apart.
  8. Using a fork or your fingers flatten the cookies and bake for 10-12 minutes.
  9. Let cookies cool on the pan a minute or two, then transfer to a wire rack and cool completely.
