Double Chocolate Breakfast Cookies






  1. Preheat your oven to 350ยบ F and line two baking sheets with parchment or baking mats.
  2. In the bowl of your stand mixer combine the coconut oil, applesauce, honey and maple syrup.
  3. Add the egg and vanilla and mix well.
  4. In a mixing bowl combine the flour, oats, cocoa powder, flax meal, chia seeds, cinnamon, baking soda and salt.
  5. Add the dry ingredients to the wet and mix until it just comes together.
  6. Fold in the cherries and scoop into 2 Tbs rounds, press a tsp of miniature chocolate chips into the top of each cookie, flattening them slightly with damp fingers.
  7. Bake for 15 minutes, cool on the pan a few minutes, then transfer to a wire rack and cool completely.
  8. Store in an airtight container or refrigerate.
