Cranberry Apple Crisp

  1. Preheat your oven to 375ยบ F and prepare 2 small individual baking dishes with cooking spray.
  2. In a small bowl add the cranberries and apple juice, let sit 15 minutes.
  3. Toss the apples and cranberry mixture with the lemon juice, divide evenly between the baking dishes and sprinkle with cinnamon.
  4. In a small bowl stir together the oats, brown sugar, salt and coconut oil.
  5. Spread the oat topping over the apples and bake for 17-20 minutes until golden and bubbling. Remove carefully from the oven, cool 10 minutes and serve warm.
