So one day last week a King Arthur Flour catalog arrived in the mail, I thumbed through it and ran across this recipe. Well I knew I just had to make it, sometimes recipes (or maybe it’s just their delicious photos) speak to me and shout “MAKE ME NOW” – so I did! I did have to tweak the recipe just a bit, I mean who really keeps grape seed flour on hand, but they still turned out tasting quite delicious. So if your feeling like some cinnamon buns or just need a little caramel in your life, give this one a try.
Recipe adapted from King Arthur Flour Caramel-Nut Cinnamon Buns
Ingredients:
For the Dough –
1 1/4 c water, warm
3 1/2 c flour
2 tbs sugar
3 tbs butter
2 tsp baking powder
1 1/4 tsp salt
2 tsp instant yeast
2 tsp vanilla extract
For the Filling –
5 tablespoons butter
1 c brown sugar
3 tbs ground cinnamon
1/2 c chopped nuts
1/2 c caramel bits
Directions:
In the bowl of your stand mixer combine the dough ingredients and mix until a smooth dough forms. Cover and let rise for 1 hour. In a small bowl add the first three filling ingredients and mix until combined, set aside. Once the dough has risen, punch it down and roll it out into a large rectangle. Spread the cinnamon mixture over the dough and top with caramel and nuts. Starting with one of the wide ends, roll into a log. Slice into 12 pieces, spray a muffin pan and place a slice into each well. Bake at 350º for 22 minutes, remove from the oven and let cool 5-10 minutes. Serve warm, topped with icing or glaze if desired.
