Peanut Butter Chocolate Sandwich Cookies

Yield 13 sandwich cookies
Ingredients
for the cookies:
- 1/2 c peanut butter, creamy
- 1/2 c +2 Tbs sugar
- 1 egg
- 1/2 tsp vanilla extract
for the filling:
- 1 1/2 oz 60% Cacao Chocolate, I used Ghirardelli
- 2 Tbs milk
- 4 Tbs butter, softened
- 1 1/2 c powdered sugar
Instructions
for the cookies:
- Stir together the peanut butter, sugar egg and vanilla extract.
- Scoop by 1 1/2 Tbs rounds and place 2" apart on a lined baking pan, sightly flatten with the palm of your hand and bake for 8-9 minutes.
- Let cool on the pan 5 minutes, then transfer to a wire rack and cool completely.
for the filling:
- In a mixing bowl combine the chocolate, milk and butter and melt in the microwave until smooth, about 30-45 seconds.
- Stir in the powdered sugar, mixing until smooth.
- Spoon or pipe the filling mixture on to the flat side of 6 cookies, placing a second cookie on top to create a sandwich.
- Serve immediately or store cookies in an airtight container in the refrigerator for up to 5 days.
